Ingredients:

  • Vegan butter

  • Nondairy milk

  • Vanilla paste

  • Sugar

  • Baking powder

  • All purpose flour

  • Frosting

  • Blueberries

Recipe:

  • 3 tablespoons vegan butter

  • 2 tablespoons nondairy milk

  • 1 teaspoon vanilla paste

  • 1/3 cup sugar

  • 1 teaspoon baking powder

  • 2/3 cup + 2 tablespoons all purpose flour

Frosting:

  • 2/3 cup frosting of choice

  • 4 tablespoons frozen blueberries

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper or spray with cooking spray.

2. In a small bowl melt the butter.

3. Transfer to a larger bowl and add in the nondairy milk, vanilla paste, and sugar. Stir to combine.

4. Add in the baking powder and flour. Stir until a dough forms. Use a cookie scoop to scoop the dough. Roll in your hands to create a ball. Slightly press down on the cookie sheet. Repeat until all dough is used.

5. Bake for 7-8 minutes.

Allow to completely cool before adding the frosting. I used a store bought vanilla frosting but any frosting will work. Add your frosting of choice to a bowl. In a separate bowl add the frozen blueberries. Microwave until they are able to be mashed. Mash with a fork until you see the juice. Pour ONLY the juice from the blueberries into the frosting. You don't want chunks of blueberries in the frosting so be sure you are only pouring the juice. Stir to combine. You can add more or less blueberries depending on the color/taste/consistency you are looking for. Optional: top with a blueberry

Be sure to store the cookies in the refrigerator or freezer. The cookies should last up to 5 days in the refrigerator. You can also store these in the freezer. It should last for up to a month.
